Dovely's Ezekiel Bread - Higher Protein

“Take thou also unto thee wheat, and barley, and beans, and lentils, and millet, and fitches [spelt], and put them in one vessel, and make thee bread thereof…”
Here is a loaf that is made with a much higher protein group of ingredients such as chickpeas, lentils and oats as well as some spelt grain, all organic and there is, as always, the high fibre. Some of the whole wheat grain is sprouted and added during the proving process to give a further nutritient boost.

The creation of his loaf takes longer than usual sourdough to enable all the goodness to ferment and the flavour to develop more whilst the grains sprout three days before baking.
As with all our bread this is sourdough so the living cultures within the dough mean that the nutrition in the final bread is more bio-available and the ingredients are organic. Pre bake weight min 1092g
